Apple Cinnamon Pancakes

Sunday Morning breakfast can be quick and easy, and that s what I need some mornings! I always use this pancake Krusteaz because its low fat and high fiber as well, with a nice blend of whole wheat and white flour…Plus no one notices the difference 🙂

This AM I added in a snack pack size  of natural no sugar added applesauce and 1 tbsp cinnamon, and made them on the stove top. I chopped up a large beautiful Gala apple and cooked it for about 8 in on high with 1 tbsp butter, 1 tbsp brown sugar ,1 tbsp  cinnamon and added 1/4 cup of raisins . Placed on top of the pancakes and drizzled lite maple syrup on top…:) Lets just say the kids devoured it and actually enjoyed the cooked apples. As did my husband and I. Happy Sunday!


Overnite Crock Pot Apple-Pumpkin Spiced Oatmeal

Another great “set it and forget it” recipe, especially for Fall! I make this a lot for the weekend so that you get up to the wonderful smell of a Pumpkin breakfast…

2 cups rolled oats

4 cups water

1 cup pumpkin puree

1 tsp pumpkin spice

1 tbsp maple syrup

1 capful of l vanilla extract

1 tbsp cinnamon

2 tbsp agave nectar

1/2 cup 2% milk (to add in the am and stir )

1 tbsp brown sugar ( oh yeah!)

1/2 cup dried cranberries ( optional) 🙂

1 cup diced apples

Spray crock pot with cooking spray and add ingredients, mix together well

1/4 tsp salt

Maple Glazed Mahi Mahi with Toasted Almonds

Pre heat oven to 400.

2-4 Mahi Mahi fillets

Maple Syrup ( lite)

Toasted almonds ( Pulse 1/4 cup of almonds in processor or blender after toasting them in a pan with 1 tbsp olive oil med-high heat for 3-5 min.)

Spray baking pan with baking spray. Season Mahi Mahi fillets lightly with salty and pepper. and place in dish. Drizzle with maple syrup over each fillet, then sprinkle with toasted almonds. Bake for 30-35 min. Drizzle again with a little bit of  heated Maple syrup and serve.

Serve Roasted Acorn Squash filled with cinnamon and 1 tbsp of brown sugar. Just slice acorn squash in half and place face down in baking dish and add 3 tbsp water. Bake for 30min. Flip over and add butter and spices. Bake another 10 minutes 🙂

Upside Down Apple Spice Cake

An easy dessert that looks like you spent hours making it! So delicious and perfect for the Fall.

1 box of spice cake with cinnamon mixture that would be used to make a coffee cake. Make batter as directed in bowl and keep cinnamon crumbles seperate.

4 apples peeled and sliced thin

1/4 cup Maple Syrup

2 cake pans sprayed with cooking spray

Pre heat oven to 350. Drizzle the maple syrup on the bottom of each cake pan. Place sliced apples in one single layer in each pan. Top  apples with 2 tbsp of the cinnamon crumbles/mixture . Add remaining cinnamon crumbs to batter and mix together. Spread batter on top of apples between both cake pans.  Bake for 35-40 minutes. Allow to cool before inverting pan.  Place 1 st cake layer on your serving platter by flipping the cake pan upside down. Place 2nd cake on top of the other one, so that the apples are in the middle and on top! Serve with cream and enjoy!

Sweet Potato Crusted Chicken

1-2 small sweet potatoes boiled or baked and skinned

2 cup plain panko crumbs

salt and pepper

1 tbsp unsalted butter

4 chicken breasts trimmed and pounded out 1/2 inch thick, season with salt and pepper.

1 tsp nutmeg

1 tbsp cinnamon

2 tbsp maple syrup

1 egg beaten plus 2 tbsp water whisked

Pre heat oven to 350. . In food processor combine the boiled skinless sweet potato, 1 tbsp butter,  panko bread crumbs and seasoning. Dip chicken in egg ( use egg beaters if you like)  and  place chicken in prepared baking dish.Then press panko sweet potato mix on top of chicken.  Drizzle maple syrup over top of each breast. Bake for 30-35 min.

You can use with Salmon or Snapper too!

Serve with Zucchini Matchsticks

Whole Wheat French Toast

A favorite breakfast for my kids!

1 loaf of whole wheat bread ( you can by from bakery whole and have them slice it thick)

3/4 cup 2% milk

3 eggs ( You can also omit eggs and use the equivalent Egg Beaters)

1 capful of vanilla extract

2 tbsp cinnamon

2-3 tbsp unsalted butter

Lite maple syrup

Whisk together milk, eggs, cinnamon, and vanilla. Heat pan on stove top, 1 tbsp of unsalted butter. Dip bread into mixture coating both sides and add to pan, cook both sides till lightly brown. Finish rest of slices using the butter sparingly.

I cut the French toast with large cookie cutters into fun shapes for my children and top with sliced bananas and syrup!
