Egg White Breakfast Burrito

Another “Do-Over” recipe this morning! Waste not, want not! Couldn’t let this all go to waste from the other nites Cubanelle Stuffed Peppers..So I heated the mixture in the pan and then added in 5 egg whites and 1 egg beaten, scrambled it..Then topped with 2% cheddar cheese. Placed in Spinach wraps and served Mango Salsa on the side..Very filling, I could barely finish it, but not my husband …he devoured it after adding a little hot sauce to it ๐Ÿ™‚

Nutella Breakfast Sandwich= Happy Children

What a great way to start your day! Whole wheat toasted with creamy, chocolaty Nutella in the middle! Great for a late nite snack attack too! ๐Ÿ™‚ My children love it anytime of the day…But for breakfast its a nice distraction right before school….

Stuffed Cubanelle Peppers

A favorite of mine, that is both sweet and spicy! ๐Ÿ™‚ย  Pre heat oven 375 Useย  5-6 large Cubanelle peppers and throw them in pan with olive oil on high heat and sear all over. Set aside to cool off…..Chop up one onion , 4 garlic cloves and olive oil…Cook 4 min. Add in ground chicken, cook until almost cooked thru. Add in 1 cup brown rice, 1/2 black beans, and 1 can of Rotelle tomatos. Heat thru and set aside. Cut thu peppers on one side and clean out the seeds. Spread 1-2 tbsp of low fat – fat free cream cheese. Stuff the stuffing in ๐Ÿ™‚ Place in baking dish. Top with reduced fat cheddar cheese. Bake for 20 min. Top with low fat sour cream and enjoy! I think I might use the leftover stuffing to make burritos another nite this week.

Green Bean Almondine Salad

Used the last of the Green Bean Almondine from Thanksgiving and added it to a big fresh green salad.PS you can add Blue Cheese crumbles too ๐Ÿ™‚

Leftover Holiday Turkey to Turkey Vegetable Soup

The last of the turkey is going into the Crock Pot to make a delicious and healthy soup today! I shredded the leftover turkey meat and stuffed a leg and two wings into the pot.ย  I added zucchini, yellow squash, celery, carrots, green beans and onions. A Can of diced tomatoes, 4 cups fat free low sodium chicken broth, 4 cups water, 1 tbsp Italian seasoning, 2 bay leafs, 1 tsp red pepper flakes,1 tsp nutmeg, salt and pepper. Later, I’ll remove the turkey bones and skin and add a cup of brown rice pasta right towards the end. Then this soup will sit over nite in fridge and be our lunch for the next couple of days at work! ๐Ÿ™‚

Turkey Swiss Burgers with Mushrooms and Onions

Love making these turkey burgers because everyone in my family enjoys them..I always add a little pizazz to me and my husbands though! The kiddies get theย  All- American cheese turkey burger and “orange fries”..I mean why tell them they are Sweet Potato fries..they would never touch them! Well maybe Ronnie, he will eat ANYTHING!

So my pizzaz to our burger was sea salt, pepper, 1 tbsp thyme, 1 tbsp basil and 1 tsp red pepper flakes…

Mushrooms and Onions=ย  placed 1 container sliced mushrooms and 1 small onion sliced…1 tsp nutmeg,1 tsp thyme, 1tsp fennel seeds, olive oil salt and pepper..Can be done on the stove top or place in a aluminum foil packet~ Cook 10-15 min..Try some of the left over shrooms on my recipe for Poachedย  Open Face Eggwich in the morning for breakfast..or dinner

Serve with toasted whole Wheat buns and a slice of low fat Swiss cheese…And of course “orange fries” ๐Ÿ™‚ Spice them up with paprika, oregano, salt and pepper and 1 tsp cayenne pepper for mommy and daddy!

Poached Open Faced Eggwich

So I made these delicious Turkey Swiss Burgers with Mushroom and Onions last nite and there were some leftover shrooms..and i thought to myself wouldn’t that be good for breakfast!

This was so good and low fat!

1 100 cal English muffin toasted

1 poached egg

handful fresh spinach

sliced tomato

my leftover mushrooms and onion from last nite warmed up

(Mushrooms and Onions=ย  placed 1 container sliced mushrooms and 1 small onion sliced…1 tsp nutmeg,1 tsp thyme, 1tsp fennel seeds, olive oil salt and pepper..Can be done on the stove top or place in a aluminum foil packet~ Cook 10-15 min)

1 slice Canadian Bacon

salt and pepper

Pile the spinach first, tomato, Canadian bacon, sh rooms, and then the poached egg…:) And always a shake or two of hot sauce…

AND!! If your doing Weight Watchers..like myself…this meal was only 5 points ๐Ÿ™‚

Leftover Turkey Wrap

Thanksgiving leftovers…And this one is delicious, healthy and easy to make!

Whole wheat wrap, 3-4 oz turkey, 2 tbsp cranberry sauce and 2 oz of crumbled goat cheese..All wrapped up to make a yummy meal! ๐Ÿ™‚
