Apple Cinnamon Pancakes

Sunday Morning breakfast can be quick and easy, and that s what I need some mornings! I always use this pancake Krusteaz because its low fat and high fiber as well, with a nice blend of whole wheat and white flour…Plus no one notices the difference 🙂

This AM I added in a snack pack size  of natural no sugar added applesauce and 1 tbsp cinnamon, and made them on the stove top. I chopped up a large beautiful Gala apple and cooked it for about 8 in on high with 1 tbsp butter, 1 tbsp brown sugar ,1 tbsp  cinnamon and added 1/4 cup of raisins . Placed on top of the pancakes and drizzled lite maple syrup on top…:) Lets just say the kids devoured it and actually enjoyed the cooked apples. As did my husband and I. Happy Sunday!

The Monday rush is over! Wanted to make a vegetarian dish tonight to give my body a break. I could eat like a vegetarian every day ( with the exception of eggs) and not miss the meat. Its nice to give the body a break, it reduces inflammation and really allows your digestive system to regulate… Well any whoo..I used my  Spaghetti Squash Casserole recipe in mind..but you know minus the meat. I have a ton of veggies from the weekend when making my Turkey Vegetable Soup…So I cooked down the tomatoes first with onions and garlic, italian seasoning , salt and pepper for about 10 mins. and then  threw it into the food processor and gave it a good whirl. I let it sit there for a bit while I chopped up zucchini, squash, mushrooms, onions, garlic, and carrots. I cut some corners by cooking the spaghetti squash in the microwave, sliced in half and face down with a 1/2 cup of water. Nuked it for about 12 -15 minutes. When done removed the water and scooped out the squash int o the baking dish I used to cook it in. While it was cooking, I cooked the vegetable mixture that I chopped up and added in some Italian seasoning, salt and pepper, and 1 tsp red pepper flakes. I also had a bag of Soy crumbles on hand that I added to the mix.Cooked on the stove top for about 8 min. Then I poured on the tomato sauce I made in the food processor. Added it to the top of the spaghetti squash in the baking dish and  topped with 2% Mozzarella cheese.  Baked for 20 min at 375…Very good and filling with all the vegetables! I just love clean and fresh eating! It makes awesome leftovers too 🙂

Its much like my recipe for Italian Style Spaghetti Squash Casserole that I use often, but this time I pretty much used ” everything but the kitchen sink” recipe! 🙂

Roasted Orange Spiced Butternut Squash with Raisins

I made this little side dish tonight while looking for something to go along with the chicken I thawed and pounded out into 3 servings ..I peeled and cubed a  large butternut squash..In the meantime, I put 1 cup of mixed raisins in a cup of warm water to soften them up. I had this large and ripe orange leftover from last weeks Crock Pot Orange Marmalade Sesame Chicken..So I couldn’t let it go to waste 🙂 And actually the kids benefited to because they got to enjoy Orange smile slices too.

Pre heat oven to 375~

On baking sheet lined with foil, place butternut squash on pan and drizzle with 2-3 tbsp olive oil. I had a large orange which I cut in half  and zested over the squash. I added sea salt, pepper, 1 tsp all spice, 1 tbsp cinnamon, 1 tbsp basil, 1 tsp ginger. I mixed in the raisins and all the spices together. Baked for about 25-35 min, giving it a good shake and stir half way 🙂 Once I plated them I drizzled them with Balsamic glaze to add a little pizazz.

After I placed the chicken into the baking dish I decided to incorporate the flavors from the butternut squash…So I juiced the orange over the chicken, cut the orange peel into little sections.. Seasoned chicken breasts with salt and pepper. Then added 1 tsp of dried mustard, 1tsp basil, and 1 tsp ginger. I placed to orange peels on each chicken breast and baked it at 375 with the squash for 20-25 mins.

These two ideas from the items I found on hand actually came out excellent! And the aromas while cooking were just so comforting. I love the smell of spices and oranges together. I often will add in small orange peels that I used and dried out to oil infusers and just fill my kitchen with this beautiful smell. (good to do after you’ve cooked seafood to FYI 🙂

Crock Pot Kale and White Bean Soup

After yesterdays fabulous feast, I did save the Pork bone to use in todays soup! My husband reminded me that this soup is very popular in Portugal but that they typically out in a couple Linguica or Chorizco sausage links…But that would take away from all the healthiness I try to maintain ( next time honey!)..However I think the pork loin will definatley add some flavor to this soup!

1 bag of Kale ( sauteed in pan with olive oil,onion,  garlic and salt and pepper)

4 cloves of garlic diced

3 carrots peeled and diced

3 stalks of celery diced

4 cups fat free low sodium chicken broth

2 cups water

1 16 oz can white beans undrained

1 tbsp Italian Seasoning

1 can of Italian diced tomatoes un drained

1 tsp red pepper flakes

salt and pepper

2 bay leaf

After sauteeing the Kale and draining on paper towels, place in crock pot with all the other ingredients. (I’m adding in pork bone with the extra trimmings, which will fall off the bone later today when I take it out! ) If you want to add some flavor, add in brown chicken sausage you buy at your local butchers or gourmet market…Peel back the casings and crumble while adding to the pan with olive oil, browning slightly and then placing in the crock pot…

Cover and Set the crock pot on low and return in 6-8 hours to a tasty and healthy meal 🙂 Top with Parmesan cheese and a little shake of hot sauce

 

My “Mock” Thanksgiving Dinner Today


Dinner was a success! The Molasses and Brown Sugar  Rub for the Pork loin cooked in 2 1/2 hours and it came out so very tender..the glazed outside was so tasty! So I’m saving the bone to use to make Kale and White Bean soup ( Ill post the recipe tomorrow)  in the crock pot tomorrow 🙂

The Roasted Fingerling Potatoes were crisp on the outside and tender on the inside. I found some turkey bacon in the fridge and added it to the roasted potatoes as well. Added a very nice flavor. I really enjoyed the pancetta with the Pan Roasted Brussel Sprouts! And this time the par boil on the brussel sprouts ahead of time really made quite the difference; not only did it cut down on the cooking time, but it made them so tender and they seared nicely in the pan.

Oh and I did add the red wine and I  also used red pepper flakes to the Fresh Cranberry and Blackberry Preserve Sauce…oh so good! Cant wait to use it on a wrap this week for lunch 🙂

Pan Roasted Brussel Sprouts

Here’s an idea for a delicious and  healthy side dish for your Thanksgiving feast..I love these!

1 lb brussel sprouts ( par boiled for about 5-8 min, until bright green) halved

1/2 pound of pancetta diced

4-5 garlic cloves diced

1 shallot sliced thin

1 cup of pecans toasted in oven on baking  sheet at 400 degrees then chopped up.

salt and pepper

Add olive oil to pan on med high heat. Add in shallots and garlic, cook for about 3 min. Add in pancetta and cook until the oils start to release. Put brussel sprouts in pan and cook for about 10 min, scraping bottom of pan occasionally and stiring those brussels around! Add in pecans and reduce the heat…Season with salt and pepper.

Cedar Plank Grilled Salmon

 

So excited to share this recipe..a nice break from all the H0liday cooking too!

I made a rub: 1 tbsp brown sugar, 1 tsp cumin, 1 tsp paprika, 1 tsp pepper, 1 tbsp chili powder, 1 tsp sea salt..Rub in and let sit for 30 min.

You can find the cedar planks at any gourmet store…Soak for atleast an hour in water. Heat grill to med-high. Place cedar plank on grill and close cover, heat for 3 min. Flip over cedar plank and then place salmon on planks..cover and cook for about 10-12 min…. 🙂 Let sit for 5 min loosely covered with foil

I’m serving up sides of skewers of grilled vegetables and Black beans and Brown Rice . I have fresh chives to chop and place on top of Salmon cooked…

Made fresh guacamole with 2 avocados ( donated by friends at work who grow these delicious fruit!) 1 jalapeno seeded and diced, 1 small onion diced, 1 tomato, seeded and diced, 1 tbsp cumin, 1 lime juiced, salt and pepper.

( Hot sauce too if you want to be adventurous) Chill for at least 30 min.

Crock Pot Orange Marmalade Sesame Chicken

Another experiment and idea of mine came out so awesome this week…Who needs take-out Chinese food when you can just make this! Its a much healthier versions….Next time I think I might add 1 tbsp lite soy sauce and more zest…but otherwise this was delicious. I made Brown rice and then drizzled with dark sesame oil and toasted sesame seeds on top….:)

1-2 lb boneless skinless dark thighs,  seasoned and browned in onion and garlic and placed in the crock pot

1 orange juiced and zested

1 jar of marmalade preserves

1 tbsp ginger

2 tbsp honey/agave nectar

1 tbsp toasted sesame seeds

1 cup shredded carrots

1/4 cup lite soy sauce

1 tsp cayenne pepper (optional)

Placed all the other ingredients on top of the browned chicken and covered and cooked on low for 6-8 hours.

Top with sliced scallions or bean sprouts.. And of course additional toasted sesame seeds

Italian Style Spaghetti Squash Casserole

This dish is has an Italian taste to it that is low fat and healthy for you!

1 medium sized spaghetti squash (cut in half and place face down in dish, add in 2 tbsp of water and cover with plastic wrap . Cook for 8-10 min…Let cool and then take a fork and scrape out the squash from the inside into a long and shallow baking dish…Looks like spaghetti. Drizzle with olive oil and set aside.)

1 16 oz container of part skim ricotta

1 pacakge of frozen chopped spinach thawed and drained

1 large  can of fire roasted tomatoes, drained

1 package of part skim or 2% shredded mozerella

1/4 cup reduced fat greated parmesean cheese

1 egg or the equivalent egg substitute

1 tbsp Italian Seasoning

salt and pepper

1 lb ground turkey ( browned with 1 small onion diced and 3 cloves of garlic diced, drain on paper towels and set aside)

Pre heat oven to 350. In a small bowl add 1/2 of the package of mozzarella cheese and Parmesan together.  Add in seasonings, spinach and egg ; mix well. Spread the ricotta mixture on top of the spaghetti squash, top with browned turkey. Spread can of drained fire roasted tomatoes on top. Sprinkle with the remaining Parmesan cheese. Bake for 30-35 minutes.

Upside Down Apple Spice Cake

An easy dessert that looks like you spent hours making it! So delicious and perfect for the Fall.

1 box of spice cake with cinnamon mixture that would be used to make a coffee cake. Make batter as directed in bowl and keep cinnamon crumbles seperate.

4 apples peeled and sliced thin

1/4 cup Maple Syrup

2 cake pans sprayed with cooking spray

Pre heat oven to 350. Drizzle the maple syrup on the bottom of each cake pan. Place sliced apples in one single layer in each pan. Top  apples with 2 tbsp of the cinnamon crumbles/mixture . Add remaining cinnamon crumbs to batter and mix together. Spread batter on top of apples between both cake pans.  Bake for 35-40 minutes. Allow to cool before inverting pan.  Place 1 st cake layer on your serving platter by flipping the cake pan upside down. Place 2nd cake on top of the other one, so that the apples are in the middle and on top! Serve with cream and enjoy!
