Sugar and Spice Salmon

Very excited to make this Salmon tonite for a friend of mine who loves Salmon! Adding a little sugar and spice to make it fun!

2 servings of Salmon

3 tbsp brown sugar

2 tbsp cinnamon

1 tsp nutmeg

1 tsp chili powder

salt and pepper

agave or honey

Mix ingredients in bowl except for agave or honey. Pre heat oven to 375. Rub in seasoning on each Salmon.. place in prepared baking dish and Bake for 35minutes. Drizzle agave nectar or honey over each fillet.

Serve with baked Arugula Stuffed Sweet Potatoes drizzled with balsamic glaze and olive oil.

Cedar Plank Grilled Salmon


So excited to share this recipe..a nice break from all the H0liday cooking too!

I made a rub: 1 tbsp brown sugar, 1 tsp cumin, 1 tsp paprika, 1 tsp pepper, 1 tbsp chili powder, 1 tsp sea salt..Rub in and let sit for 30 min.

You can find the cedar planks at any gourmet store…Soak for atleast an hour in water. Heat grill to med-high. Place cedar plank on grill and close cover, heat for 3 min. Flip over cedar plank and then place salmon on planks..cover and cook for about 10-12 min…. 🙂 Let sit for 5 min loosely covered with foil

I’m serving up sides of skewers of grilled vegetables and Black beans and Brown Rice . I have fresh chives to chop and place on top of Salmon cooked…

Made fresh guacamole with 2 avocados ( donated by friends at work who grow these delicious fruit!) 1 jalapeno seeded and diced, 1 small onion diced, 1 tomato, seeded and diced, 1 tbsp cumin, 1 lime juiced, salt and pepper.

( Hot sauce too if you want to be adventurous) Chill for at least 30 min.

My “Do-Over” Chicken Chili to Pizza

Used my leftover Pulled Chicken Chile and made a Pizza! Just used BBQ sauce as a base and then strained the Chili, topped with chopped red onions, carrots and tomatoes..And of course low fat cheddar cheese! So good!

Crock Pot Pulled Chicken Chili

I love just using the crock pot..Because when its so hectic at work and I know I’m going to get out late..Its comforting to know that dinner is already ready on my counter top. Takes only 10 minutes to put together in the morning and a few additions when you get home. It makes life simple! And a added bonus too because its very healthy and low fat!

I had some chicken tenderloins in fridge that I was going to use for something else but forgot! But I knew I wanted to make I used the chicken instead of ground turkey.  Whats nice is that you put the chicken in raw and when you get home you just pull apart with a fork.. It becomes so tender and juicy!

Here’s what I did:

Turn crock pot on to Low. Places 1lb of raw chicken tenderloins in the crock pot. Season with salt and pepper.

2 cans of fire roasted tomatoes , undrained

1 can of pinto beans drained and rinsed

1 can of light red kidney beans drained and rinsed

1 small can of green chilies

2 cups of water

2 tbsp chili powder

1 tbsp cumin

1 tbspn paprika

1 tsp cinnamon

1 tsp cayenne pepper ( optional)

1 tsp nutmeg

1 bay leaf ( remember to remove before serving!)

Add all into crock pot and mix well! Cooks for 6-8 hours. I got home late again in 9 hours and turned it to Keep Warm , I took out all of the chicken and placed in a bowl and pulled apart with a fork and put back in!

I added 1 cup of thawed corn kernels and I made a pot of brown rice. Easy!  I chopped up some scallions to sprinkle on top. I have low fat cheddar cheese too! 🙂 These meals always make my husband very happy! He loves any meal he can eat out of a bowl! 🙂

Crockpot Chili and Cornbread

Were having a pumpkin carving fun day with friends and family today, so I thought I would make some Chili and Cornbread to go along with this Fall themed day! Plus its always a “score” when Football is on! 🙂

3-4  lbs lean beef

1 onion diced

4 garlic cloves diced

1 green pepper diced

1 can diced tomatoes ( I use fire roasted) drained

1 small can tomato paste

1 can dark red kidney beans, rinsed and drained ( I use 2 cans)

3 tbsp cinnamon

2 tbsp chili powder

1 tsp cayenne pepper (optional..but adds a nice heat)

1 tbsp cumin

1 tbsp paprika

1 bay leaf ( remove when chili cooked)

salt and pepper

2 tbsp dark brown sugar

Brown  meat on med-high till almost cooked thru. Place in crock pot and add reaming ingredients and 3 cups of water. Mix well. Set on low. Will be done in 6 hours!

Serve with chopped red onions, finely shredded cheddar cheese and low fat sour cream on top! Can also serve it over brown rice or with Tortillas to scoop it up!

I’m making cornbread to go with mine! Use any simple cornbread mix, add in 1 cup of thawed corn kernels, 2 tbsp honey/agave, and 1 tsp cayenne pepper. Bake as directed and serve alongside the Chili 🙂

Crockpot Turkey Chili

2 lb ground turkey

1 tbsp chili powder

1/2 tbsp onion powder

1/2 tbsp cumin powder

1 tbsp cinnamon

1 tbsp paprika

1 small can tomato paste

1 can red kidney beans drained and rinsed

1 can diced tomatoes

3 cups water

salt and pepper

Turn crock pot on low, add all ingredients and cook 6-8 hours.

Serve over brown rice and top with chopped white onions and reduced fat sharp cheddar cheese 🙂
