Egg White Breakfast Burrito

Another “Do-Over” recipe this morning! Waste not, want not! Couldn’t let this all go to waste from the other nites Cubanelle Stuffed Peppers..So I heated the mixture in the pan and then added in 5 egg whites and 1 egg beaten, scrambled it..Then topped with 2% cheddar cheese. Placed in Spinach wraps and served Mango Salsa on the side..Very filling, I could barely finish it, but not my husband …he devoured it after adding a little hot sauce to it 🙂

Stuffed Cubanelle Peppers

A favorite of mine, that is both sweet and spicy! 🙂  Pre heat oven 375 Use  5-6 large Cubanelle peppers and throw them in pan with olive oil on high heat and sear all over. Set aside to cool off…..Chop up one onion , 4 garlic cloves and olive oil…Cook 4 min. Add in ground chicken, cook until almost cooked thru. Add in 1 cup brown rice, 1/2 black beans, and 1 can of Rotelle tomatos. Heat thru and set aside. Cut thu peppers on one side and clean out the seeds. Spread 1-2 tbsp of low fat – fat free cream cheese. Stuff the stuffing in 🙂 Place in baking dish. Top with reduced fat cheddar cheese. Bake for 20 min. Top with low fat sour cream and enjoy! I think I might use the leftover stuffing to make burritos another nite this week.

Turkey, Cranberry and Goat Cheese Wrap

Very excited to make my lunch for tomorrow..Going to use the Fresh Cranberry and Blackberry Preserve that I made on Sunday with 2 tbsp of goat cheese spread on top of a whole wheat wrap and topped with thinly sliced fat free turkey breast. 🙂 These are the leftovers I actually enjoy eating..I call them “Do-Over” because I have to use the previous ingredients to make something new..That’s just how I am!  🙂

You could even do a wrap post-Thanksgiving , using the cranberries, turkey and stuffing..and a little gravy too! Just wrap it all up and then heat them up in toaster oven at 400 for about 10 min 🙂

Taco Nite

Easy and healthy! Used lean ground chicken..add in taco seasoning, chopped green pepper, 1 can of Rotelle, lime juice..Served over bed of romaine hearts with low fat cheddar cheese and broken whole grain taco shells

Black Bean Breakfast Burritos

I’m using the left over Black beans from last nites Black Bean Turkey Burgers to make this tasty breakfast…

5 egg whites and 1 whole  egg and 1 tbsp of 2% milk

2 whole wheat and low carb tortillas

1 can of seasoned black beans ( cuban style) heat in saucepan

2 wedges laughing cow lite queso cheese

salt and pepper

1/2 salsa of your choice

Beat eggs and milk in bowl and add to pan heated with olive oil on stove top, season with salt and pepper. Add in 1/2 cup of the black beans after the eggs are almost scrambled. Mix together well. Heat up tortillas in oven or microwave. Spread a wedge of cheese on each tortilla, dived up egg mixture between both tortillas. Add 2 tbsp of salsa and roll and fold up!

Easy Cheesy Turkey Sausage Dip

1 package of 2% Velveeta Cheese

1 thawed roll of Turkey Sausage

1 can of Original Rotelle tomatoes

Melt cheese in a medium size casserole dish. Crumble and brown the turkey sausage, drain on paper towels. Add to melted cheese. Add in tomatoes  and mix well. Heat together in microwave for about 3 minutes..Serve with Scoop Tortillas!

Chicken Rolls with Spinach, Goat Cheese and Sun Dried Tomatoes

1 kg of Spinach leaves separated from the stem...

1 lb of thin cutlet-style  chicken breast

1 bag of baby spinach chopped

1/3 cup of sun dried tomatoes chopped

1 container of crumbled goat cheese

salt and pepper

Pre heat oven to 350

Season chicken with salt and pepper, spray pan with cooking spray. On top of each breast of chicken sprinkle goat cheese and press down, add 1-2 tbsp of sun dried tomatoes and a handful of the chopped spinach. Roll up and place seam side down. Continue placing each roll up next to the other for support. Top with the remaining spinach, goat cheese and sun dried tomatoes. Bake for 30 minutes.

Turkey Pepperoni and Cheese Pizza

fresh pizza dough rolled in flax-seed ( whole wheat is better when you can find it)

1/4 cup  flour for working surface

1 cup pizza sauce of your choice

1/2 package of turkey pepperoni

1 cup part skim mozzarella cheese

Pre heat oven to 450 degrees. Place pizza stone in oven, let heat up for 10 minutes. Prepare dough and place on work surface  dusted with flour. Remove pizza stone from oven and quickly stretch out pizza dough and press down so that dough fits the whole stone.  Using spoon spread the sauce, place slices of turkey pepperoni on top of sauce and then finish with cheese on top. Bake until crust in lightly brown and cooked, about 15 min. Sprinkle with reduced fat Parmesan cheese. Optional: Sprinkle red pepper flakes on as well!

You can add all your favorite veggies and make it “Supreme” too!

Quick Breakfast

My favorite breakfast is Egg whites with leeks and a creamy garlic laughing cow cheese wedge…Fast and healthy! 🙂 Add olive oil to pan and heat up leeks and add egg whites, fold over for omlette and spread cheese on top!
