Crock Pot Apricot Glazed Short Ribs

So excited about this recipe, its a bit of a challenge with the flavors Em trying out..But Im hoping for the best! I loved the Marmalade Sesame Orange Chicken I made in the crock pot, so I was trying to think what else I could do with these preserves I found. So I came across the same brand again..and it was in Apricot..For some reason BBQ short ribs came to mind, and then I thought why not glaze them in the Apricot preserves and then serve BBQ sauce on the side?! So here it is!

3 lbs of beef short ribs

2 small onions sliced thick

1 tbsp molasses

1/4 red wine vinegar

1/4 cup water

1 tbsp cornstarch ( set aside for later)

salt and pepper

Season short ribs with salt and pepper, sprinkle lightly with flour. Brown in pan on med high with 2 tbsp extra light olive oil.  Place onions in the bottom of the crock pit, add molasses, red wine vinegar and 1/4 cup water. Place short ribs on top of the onions. Pour Apricot preserves all over short ribs. Cover and set on low for 6 hours.


North Carolina Style Pulled Chicken

Set crock pot on low.

Add one onion chopped

3 garlic cloves diced

1 can diced tomotoes

1 Bulls Eye or Stubbs Carolina style BBQ sauce

4 chicken breasts seasoned with salt and pepper

Cook 5-6 hours, pull apart with fork and let simmer longer. Serve on whole wheat buns  with Coleslaw and  extra sauce if needed! Don’t forget the hot sauce! try a little jalapeno too 🙂

BBQ Pineapple Pizza

1 fresh pizza dough from bakery

1/2 cup BBQ sauce of your choice as the base

3/4 cup fresh pineapple diced

4 slices of Canadian bacon diced

1/2 red onion thinly sliced

1 cup low fat shredded mozzerella cheese

Pre heat oven to 450 degrees. Place pizza stone in oven, let heat up for 10 minutes. Prepare dough and place on work surface  dusted with flour. Remove pizza stone from oven and quickly stretch out pizza dough and press down so that dough fits the whole stone.  Using spoon spread the base on dough. then top with all your ingredients  finishing with  cheese on top. Bake until crust in lightly brown and cooked, about 15 min.
