Gingerbread and Nutella Sandwich Cookies

These are a must have around our house during that Holiday season! They always go fast, I never seem to make enough! So simple to make for someone like me who dislikes to bake so much, but these cookies are worth it! And they are quite the hit at any party and make great gifts too!

I use a standard gingerbread mix..and make the cookie dough. Chill for 30 min. Pre heat oven to 375. Roll into small balls and then roll in sugar. Press down on balking sheet covered with parchment paper with a both direction also to make a nice pattern. Cook for 8 min. Cool completely. Then the best part…Spread a tsp  of Nutella on one cookie and join with another cookie to make a sandwich…Make them all and let sit for a bit! Makes about 12 cookies….watch out they disappear fast! 🙂


Lemon Blueberry Muffins with Vanilla Lemon Glaze

Easy to make, not always the healthiest..But sometimes you have to have something sweet! Use a standard blueberry muffin mix, swap out oil for 1 small snack size applesauce cup and use egg beaters instead…add in lemon zest to batter. Glaze is made up of 1 lemon squeezed, 1 cupful vanillas extract, lemon zest and 1 cup Splenda…Whisk together and pour of muffins out of oven and let sit.

Mini Caramel Pumpkin Pies

1 Can of Pumpkin ( make as directed with the exception of using Fat free evaporated milk and egg beaters..and I use the pumpkin spice mix too)

24 Mini graham cracker crusted pies in aluminum foil pans

1 bag of mini caramels (melt as directed)

Pre heat oven as directed..Line mini pans on baking sheets. Place a generous tablespoon of the melted caramel on the bottom. Then using a ladle, pour pumpkin  mixture into pie shells 3/4 full. Bake at 425 for 10 min and reduce heat to 350 and cook for 30-35  min. Let sit 5 min before serving. Top with light whipped cream!

Upside Down Apple Spice Cake

An easy dessert that looks like you spent hours making it! So delicious and perfect for the Fall.

1 box of spice cake with cinnamon mixture that would be used to make a coffee cake. Make batter as directed in bowl and keep cinnamon crumbles seperate.

4 apples peeled and sliced thin

1/4 cup Maple Syrup

2 cake pans sprayed with cooking spray

Pre heat oven to 350. Drizzle the maple syrup on the bottom of each cake pan. Place sliced apples in one single layer in each pan. Top  apples with 2 tbsp of the cinnamon crumbles/mixture . Add remaining cinnamon crumbs to batter and mix together. Spread batter on top of apples between both cake pans.  Bake for 35-40 minutes. Allow to cool before inverting pan.  Place 1 st cake layer on your serving platter by flipping the cake pan upside down. Place 2nd cake on top of the other one, so that the apples are in the middle and on top! Serve with cream and enjoy!

Low fat graham cracker pie crust

a Box of low fat graham crackers…place a sleeve of crackers into zip lock bag and smash into crumbs.

1 package of fat-free vanilla pudding mix ( using 2% milk to make and set in fridge to set)

1 package of fat-free chocolate pudding mix ( using 2% milk to make and set in fridge to set)

2 -3 ripe bananas

1 tbsp of cinnamon

After pudding set, place graham cracker crust on the counter and slice bananas on the bottom, pour in chocolate pudding. Place 1/2 bag of the graham cracker crumbs on top next. Press down ever so slightly.. follow with sliced bananas. Same step with the vanilla pudding, sliced bananas and the rest of graham crackers. Press down ever so slightly.. Sprinkle cinnamon on top. Must chill at least 4-6 hours, over nite is best! :0)

Pineapple Pouches

Place 4 large squares of aluminum foil on counter. Put 1/2 cup of diced pineapple on each square. Put a small square of caramel candy on top of each and sprinkle with cinnamon. Fold up sides and place either in oven at 400 for about 20 min or grill for about 15 min medium high heat.

Serve as dessert! Spike each foil packet with rum for fun!

Yogurt Parfaits

Make these the nite before and will be a yummy treat for breakfast or even dessert!

4 clear plastic Solo cups or large glasses ( I use large wine glasses if serving dessert at a dinner party)

1 large container Fat Free French Vanilla Yogurt (Stonyfields is my favorite)




Any flavor Bear Naked granola or Kashi Go Crunch cereal:  3/4 cup per cup ( if making for dessert buy chocolate flavored granola)

Layer the yogurt in the cups alternating with fruit layer and granola layer, to the top and cover with plastic

Dark Chocolate Dipped Strawberries and Pound Cake Kabobs

A fast and easy dessert, sure to please anyone’s tastebuds! Great for parties!

1 pound cake , cut into 1-2 inch squares

Melt chocolate in microwave according to directions. After cleaning and drying strawberries, dip into dark chocolate and place on parchment paper. Once all strawberries dipped, start assembling kabobs: Take one of the short kabob sticks and thread on piece of the pound cake, a strawberry and then another piece of pound cake. Place on a platter your planning on using, but can also be placed in the fridge. Continue with all the remaining items.  Then chill for about 2 hours.

Grilled Pineapple

After prepping a pineapple or buy already skinned and cored up whole pineapple, cut Pineapple in half and place each half flat side down on two big pieces of aluminum foil. On top of the pineaple rub in cinnamon and brown sugar.  Wrap up pineapple and place on top rack on grill for 15-20 minutes. Open place on serving platter, slice and serve!

(Optional 1/4 cup of Captain Morgan Rum in each foil package 🙂

Grilled Peaches

Easy end of summer way to enjoy those juicy peaches!

Clean and dry 4 peaches
Slice in half removing pit
Place open side down on grill at medium high for about 5 minutes each side. (If you want save the juices place over aluminum foil on grill )
Plate and top with reduced fat cool whip or whipped cream.

Serves 4
