Nutella Breakfast Sandwich= Happy Children

What a great way to start your day! Whole wheat toasted with creamy, chocolaty Nutella in the middle! Great for a late nite snack attack too! 🙂 My children love it anytime of the day…But for breakfast its a nice distraction right before school….

Taco Nite

Easy and healthy! Used lean ground chicken..add in taco seasoning, chopped green pepper, 1 can of Rotelle, lime juice..Served over bed of romaine hearts with low fat cheddar cheese and broken whole grain taco shells

Black Bean Breakfast Burritos

I’m using the left over Black beans from last nites Black Bean Turkey Burgers to make this tasty breakfast…

5 egg whites and 1 whole  egg and 1 tbsp of 2% milk

2 whole wheat and low carb tortillas

1 can of seasoned black beans ( cuban style) heat in saucepan

2 wedges laughing cow lite queso cheese

salt and pepper

1/2 salsa of your choice

Beat eggs and milk in bowl and add to pan heated with olive oil on stove top, season with salt and pepper. Add in 1/2 cup of the black beans after the eggs are almost scrambled. Mix together well. Heat up tortillas in oven or microwave. Spread a wedge of cheese on each tortilla, dived up egg mixture between both tortillas. Add 2 tbsp of salsa and roll and fold up!

Still thinking of  the dinner I made  last nite after I picked up my ingredients from Publix…Pondered on the way home…” what can I make that will be super easy, but also healthy and a tasty reward after a long day at work..”  My husband and I were very happy with it 🙂 Going to use the left over black beans to make Black Bean Breakfast Burritos this morning!

1 lb lean ground turkey breast season with salt and pepper and form into burgers (should make 3 nice sized ones)

1 can of seasoned black beans ( cuban style) heat in small sauce pan

3 wedges of laughing cow lite queso cheese ( a new addition to their delicious flavors I have been wanting to try…very good!)

Salsa of your choice ( i always seem to use the Chachi’s mango salsa 🙂

1 avocado sliced

Whole Wheat buns or whole wheat sandwich thins

On the side: Sesame blue tortilla chips  and low fat sour cream

Heat olive oil in pan at med-high..Place burgers in pan and cook 7 min each side. Toast buns in toaster over. On bottom bun, spread the 2 tbsp of the black beans, burger next and then the wedge of queso cheese on top. Place 2-3 slices of avocado on each.  Serve with tortilla chips and the salsa!

Roasted Acorn Squash

Roasted Acorn Squash filled with cinnamon and 1 tbsp of brown sugar. Just slice acorn squash in half and place face down in baking dish and add 3 tbsp water. Bake for 30min. Flip over and add butter and spices. Bake another 10 minutes 🙂

Pumpkin Seed Brittle

Pumpkin Seed Brittle…prepare as normal ( see Roasted Pumpkin Seeds) with just sea salt and then after baking and cooling….Pour generous amounts of melted dark chocolate and sprinkle with cranberries and raisins…Place in freezer for 25-30 min…remove and break into pieces!

Roasted Pumpkin Seeds

My favorite seasonal snack..Love to make different varieties and its so easy to do! Makes nice little gifts too…Just place in treat bags and tie with seasonal ribbons.

As soon as the pumpkin seeds are removed from the pumpkin, I rinse them and separate  the flesh. I spread them out on paper towels and let them dry out for 2 days.

Today I’m making Sugar and Spice …

Pre heat oven to 400. Place aluminum foil on a large baking sheet and drizzle with olive oil. Place pumpkin seeds on pan, drizzle with olive oil.  Sprinkle with 1 tbsp cinnamon, 1 tsp pumpkin pie spice, 1/4 tsp sea salt, 2 tbsp dark brown sugar. Mix well on pan and spread out flat. Drizzle the top with agave nectar or honey. Bake for about 15-20 minute. Stir around and spread out again half way thru the roasting process. Let sit on counter top till cool….

Other ways to season them:

Lots and lots of sea salt 🙂

Sea salt, cayenne pepper, chili powder, cumin

sea salt , italian seasoning, sprinkled with Parmesan cheese after out of the oven and cooling

Easy Cheesy Turkey Sausage Dip

1 package of 2% Velveeta Cheese

1 thawed roll of Turkey Sausage

1 can of Original Rotelle tomatoes

Melt cheese in a medium size casserole dish. Crumble and brown the turkey sausage, drain on paper towels. Add to melted cheese. Add in tomatoes  and mix well. Heat together in microwave for about 3 minutes..Serve with Scoop Tortillas!

Simple and Fresh Zucchini Side Dish

3-4 medium Zucchini

Pre heat 350

Just slice into 1/2 inch slices and place in baking dish..Season with salt and pepper and a 2 tbsp olive oil.  1/2 lemon juiced. Mix together and bake 30 min. Top with fresh parsley.
