Pizza Nite!

Italian style with chopped salami and prosciutto with artichoke hearts, sliced pepperchionis, fresh sliced buffalo mozzarella and dollops of 2% ricotta cheese..with fresh sliced plum tomatoes and chopped basil ūüôā = Heaven!

My ‚ÄúDo-Over‚ÄĚ Chicken Chili to Pizza

Used my leftover Pulled Chicken Chile and made a Pizza! Just used BBQ sauce as a base and then strained the Chili, topped with chopped red onions, carrots and tomatoes..And of course low fat cheddar cheese! So good!

Dinner “In” Tonite

Making my Greek Style Pizza tonight for dinner, and topping it with fresh chopped arugula..One of my favs!

Turkey Pepperoni and Cheese Pizza

fresh pizza dough rolled in flax-seed ( whole wheat is better when you can find it)

1/4 cup  flour for working surface

1 cup pizza sauce of your choice

1/2 package of turkey pepperoni

1 cup part skim mozzarella cheese

Pre heat oven to 450 degrees. Place pizza stone in oven, let heat up for 10 minutes. Prepare dough and place on work surface  dusted with flour. Remove pizza stone from oven and quickly stretch out pizza dough and press down so that dough fits the whole stone.  Using spoon spread the sauce, place slices of turkey pepperoni on top of sauce and then finish with cheese on top. Bake until crust in lightly brown and cooked, about 15 min. Sprinkle with reduced fat Parmesan cheese. Optional: Sprinkle red pepper flakes on as well!

You can add all your favorite veggies and make it “Supreme” too!

Sweet Potato Wedges

Pre heat oven to 400. If you have a pizza stone , place in oven while heating up. Otherwise line a baking sheet with foil.

Take 3 sweet potatoes and clean outside. Cut in half longwise and then each half in half and then into wedges about 1-2 inch thick. Place on baking sheet and drizzle with olive oil . If using the pizza stone, place in large bowl. Season with salt and pepper, 1tspn each paprika, cayenne pepper, cumin and 1/2 tsp cinnamon .
Mix around, coating all potatoes.
Bake 30-40 minutes, until brwoned outside and soft in center.
Tossing around half way.

Serve alongside any burger!

Tomato Basil and Mozzarella Pizza

1 fresh pizza dough

3 plum tomatoes sliced into medallions

1 package fresh basil leafs chopped

2 large fresh buffalo Mozzarella  sliced into medallions

1/2 cup of pizza sauce

Pre heat oven to 450 degrees. Place pizza stone in oven, let heat up for 10 minutes. Prepare dough and place on work surface  dusted with flour. Remove pizza stone from oven and quickly stretch out pizza dough and press down so that dough fits the whole stone.  Using spoon spread the base on dough. then top with all your ingredients  finishing with cheese on top. Bake until crust in lightly brown and cooked, about 15 min. Finish with more basil on top.

BBQ Pineapple Pizza

1 fresh pizza dough from bakery

1/2 cup BBQ sauce of your choice as the base

3/4 cup fresh pineapple diced

4 slices of Canadian bacon diced

1/2 red onion thinly sliced

1 cup low fat shredded mozzerella cheese

Pre heat oven to 450 degrees. Place pizza stone in oven, let heat up for 10 minutes. Prepare dough and place on work surface  dusted with flour. Remove pizza stone from oven and quickly stretch out pizza dough and press down so that dough fits the whole stone.  Using spoon spread the base on dough. then top with all your ingredients  finishing with  cheese on top. Bake until crust in lightly brown and cooked, about 15 min.

Greek Style Shrimp Pizza

Fresh pizza dough from bakery ( I roll mine into whole flax seeds)

1/4 cup flour for dusting

1/2 pound cooked shrimp

reduced fat feta cheese block

small jar of roasted red peppers cut into long strips

plum tomato sliced into medallions

1/2 red onion cut into thin slices

1/4 cup of banana peppers

1/2 tbsp oregano sprinkle on top of cheese

1 tsp red pepper flakes

salt and pepper

For the base : 5 garlic cloves and 5 tbsp olive oil and 1/2 lemon squeezed. salt pepper and 1 tsp oregano (Blend in blender or food processor, season lightly with sea salt and pepper)

Pre heat oven to 450 degrees. Place pizza stone in oven, let heat up for 10 minutes. Prepare dough and place on work surface  dusted with flour. Remove pizza stone from oven and quickly stretch out pizza dough and press down so that dough fits the whole stone.  Using spoon spread the base on dough. then top with all your ingredients  finishing with crumbling the feta cheese on top. Bake until crust in lightly brown and cooked, about 15 min.

Remove pizza from oven and let sit for 5 minutes on stone. Use pizza cutter and serve on plate with Arugula or Spring greens on top and drizzle balsamic vinegar over. This pizza definitely requires a fork! ūüôā
