Lean Pork Tenderloin with Apples and Sage

One of my favorite Fall dishes, very aromatic with the sage and apples. goes really well with Roasted Potatoes. Also a  simple recipe to make and healthy too! Great for dinner parties 🙂

Pre heat oven to 425. Spray pan with baking spray. Take 1-2 lb lean pork tenderloin and season with salt and pepper.

1-2 granny smith apples sliced

1 large onion thinly slice

1 package of fresh sage chopped

1 tbsp thyme

1/4 cup water

1 tsp nutmeg

1 tbsp cinnamon

Place water in bottom of pan. Layer onions first, then apples, 1/2 of the sage…Set tenderloin on top. Season with rest of the sage and spices on top of everything. Bake for 45-55 minutes. Let sit 5 min before slicing.
