White Bean Patties

2 cans of white beans or cannelloni beans

2 cloves of garlic diced

1 small onion diced

1 cup italian style panko crumbs or brown rice crumbs

1/2 lemon squeezed

2 tbspn dijon mustard

2 tbsp low fat mayo

salt and pepper

(If you used plain bread crumbs add in 1 tbsp Italian Seasoning)

1 tsp red pepper flakes (optional)

In a bowl add in drained and rinsed beans, using a fork smash the beans…till a pasty consistency. Add garlic, onion,lemon juice, mayo, mustard, panko and seasonings. Mix well. Form into “burger” patties. Heat olive oil in pan at med high and cook patties 5-7 min per side till nice and browned.

Place patties on toasted whole wheat buns and top with lettuce, tomatoes, red onion slices and a wedge of lite laughing cow cheese spread ( i use the garlic one)

Serve with Sweet Potato Fries or Grilled Romaine Hearts
