Mexican style stuffed peppers

4 green peppers ( cut off tops, clean out seeds, Brown in pan with olive oil and place in baking dish)
1 small can corn
1 can black beans drained and rinsed
1 can Rotelle Mexican tomatos
1 tbsp cumin powder
1 tsp cayenne pepper
Salt and pepper
(Optional hot sauce)
1 cups cooked brown rice
1 lb ground turkey cooked and drained
2 cups reduced fat Mexican cheese blend
1/2 bunch of scallions chopped

Pre heat oven to 375
After turkey cooked and drained , return to pan and add remaining ingredients, except cheese. Cook for about 5 min.
Stuff peppers full and top with cheese. Cook 25-35 min

Serve with a dollop of sour cream and scallions. And of course tortillas !!
