Stuffed Portabella Caps

4 large portabella mushroom caps, wiped with damp cloth..

1 package reduced fat feta

1/4 cup pine nuts

1tsp cinnamon for each cap

Pre heat oven to 350. Place mushroom caps with open side up.. Drizzle with olive oil. Stuff each feta cheese and top with pine nuts. Sprinkle with cinnamon. Bake 20-25 min..

Serve along side a pork tenderloin or roasted chicken.

Awesome as appetizer too! you can use the baby portabellas and cut off stems to expose underside.
