Fingerling Potato Fries

Fingerling Potatoes

Pre heat oven to 450. Slice the big fingerling potatoes ( prefer the purple ones) lengthwise, leave the small ones whole. Place on baking sheet and drizzle with olive oil, sea salt and pepper, mix around. If you have a pizza stone works much better! (Optional red pepper flakes) Bake for about 15-20 minutes until crispy on outside, be sure to move around on baking sheet a couple of times in the cooking process. Once done, sprinkle with additional sea salt to taste.

These go great with my Italian “Suprise” Burgers
