Turkey Meatloaf

1.5 lbs ground turkey

1 onion diced

2 cloves garlic diced

1 green bell pepper diced

1 red bell pepper diced

(Optional : portabella mushroom diced)

1 small can tomato paste

3/4 cup oatmeal (rolled oats)

1/2 cup italian bread crumbs

1 tbsp Italian seasoning herb mix ( rub between palms over bowl)

salt and pepper

1 egg

Pre heat Oven to 350. Mix all ingredients in big bowl. Add more breadcrumbs if too dry. Place in baking dish sprayed with cooking spray. Form into a loaf. Squeeze ketchup over the top in a zig zag formation and then Dijon mustard the same way opposite direction. Bake for 55-65 min. Let sit for 5 minutes before serving.

I serve it with Mashed Garlic Cauliflower on the side 🙂 Makes great leftovers as a Hot or cold sandwich with a slice of swiss. 🙂
