Mashed Garlic Cauliflower

1 head of caulliflower

salt and pepper

1 tbsp olive oil

3-4 cloves of garlic minced (food processor or blender will do it for you)

1 small onion minced (food processor or blender will do it for you)

1/2 cup fat-free half and half

Rinse and break off cauliflower into florets. Steam cauliflower on stove top till crumbles when fork inserted. In blender add olive oil, garlic and onion. Mix and add steamed cauliflower. Slowly pour in creamer and mix till consistency desired. Season with salt and pepper.
