Shrimp and Feta with Diced Tomatoes

1 lb shrimp peeled with tails left on

1 can fire roasted tomatoes undrained

1 onion diced

3 cloves garlic diced

1 package of reduced fat or fat-free Feta cheese

1 tbsp oregano dried

1 tbsp basil dried

2 tbsp Extra virgin light olive oil

sea salt and pepper to taste

1/2 tbsp red pepper flakes ( optional)

Add olive oil to pan and heat to medium-high. Add onion cook till clear and then add garlic, cook until you can smell the aroma! After the rinse and drying of peeled shrimp add to pan, cook until almost all are pink. Add tomatoes to the pan. Add seasonings. ( To release the flavor of dried herbs, rub them in your palms over the pan as you are adding them). Reduce heat to medium low or low (depending on your stove top because mine cooks fast!) Crumble the feta over the entire pan, bake on stove top until cheese is melted. Season with salt and pepper.

Serves 4 .

Excellent over brown rice. Makes  a great leftover in a whole wheat wrap with the brown rice too for lunch!
